Zucchini Pancakes

Ingredients
- 1 grated zucchini (or the skin of 2 zucchinis)
- 2 eggs
- 1 tablespoon of flour
- 1 teaspoon of masala
- 1 pinch of salt and pepper
Steps
- Start by grating the zucchini then drain it using a kitchen towel.
- Mix it with the eggs, spices and flour.
- Fry the pancakes for 30 seconds on each side in a very hot, oiled pan.
Easy to make for the whole family, it's disgusting! You can even freeze them, which is super convenient for those weeks when you're feeling fed up.
Naturally, we used a green zucchini because it was one of the fruits and vegetables saved this week, but if you prefer a yellow one or it's whatever you have on hand, it's just as delicious.
